Fall means pumpkins and all the good things that can be made with them. These Cream Cheese Pumpkin Bars are a real melt-in-your-mouth treat for everyone.

Cream Cheese Pumpkin Bars

1 1/3 cups flour

¾ cup sugar (divided)

½ cup brown sugar

¾ cup cold butter (cubed)

1cup old fashioned oats

1 cup chopped pecans

1 8-ounce package cream cheese (softened)

1teaspoon pumpkin pie spice

1teaspoon cinnamon

1 can of pumpkin (15 ounce)

1teaspoon vanilla

3 eggs lightly beaten

Preheat oven to 350 degrees. In a medium bowl mix flour, ¼ cup of white and brown sugar. Cut in butter until crumbly. Stir in oats and pecans. Reserve 1 cup for topping.

Press remaining crumb mixture into the bottom of a greased 13x9 inch baking pan. Bake 15 minutes.

In a small bowl, beat cream cheese, spices and remaining sugar until smooth. Beat in pumpkin and vanilla. Add eggs, beat on low speed just until blended. Pour over warm crust and sprinkle with the reserved crumb mixture.

Bake 25-30 minutes or until a knife inserted comes out clean and filling is set. Let cool and serve with a dollop of whipped cream.
